Cinnamon Cereal

I was given a copy of Awaken, 30+ Egg Free & Grain Free Breakfasts to review. It’s a smaller cookbook, but has some nice recipes in it with beautiful photography. She has some ideas for chia seeds, recipes for sausage using chicken or pork, and some smoothie recipes.

My favorite recipe from this cookbook was the cinnamon cereal. My daughter eats it like cereal with almond milk. I prefer to use it as a granola type of topping for my yogurt.

Cinnamon Cereal and Greek Yogurt

CINNAMON CEREAL

This recipe is for four servings.

INGREDIENTS:

  • ⅔ cup almond flour (150 mL)
  • ⅔ cup chopped nuts (150 mL) (I used pecans and walnuts)
  • ⅓ cup golden flax meal (75 mL)
  • ½ cup equivalent granular sweetener (125 mL) (I used golden Lankanto)
  • 1 Tbsp cinnamon (15 mL)
  • ¼ cup coconut oil (60 mL)
  • 2 Tbsp water (30 mL)

DIRECTIONS:

  1. Preheat oven to 300°F (149°C).
  2. Combine the almond flour, nuts, golden flax seed meal, sweetener, and cinnamon.
  3. Add the coconut oil and water to the dry ingredients and mix until incorporated and crumbles form.
  4. Spread the mixture onto a parchment paper lined rimmed baking sheet.
  5. bake for 12 minutes.
  6. Remove the pan from the oven and turn off the oven.
  7. Stir the mixture lightly (trying not to break any of the crumbles) and return the pan to the oven and let sit for 20 minutes or until crisp.
  8. Place the cereal in a bowl and serve with dairy free milk of choice (unsweetened almond milk, unsweetened coconut milk, etc.).

Turmeric Tea

My supervisor at work had a broken foot that didn’t heal properly. Her foot was so swollen she had to wear shoes that allowed the top of her foot to be open. She said that within 3 days of drinking turmeric tea the swelling was gone! Her recipe included honey, but I try to eat a low carb/ketogenic diet so I used a different sweetener in mine. She also used lemon juice. I use apple cider vinegar because that’s what I had available.

This does require stirring while drinking or the powders will settle to the bottom.

Turmeric Tea

Place the turmeric, ginger, and pepper in a cup. Add hot water, cover and let sit for a few minutes. (I use my swell bottle for this) Then pour into a cup and add the rest of the ingredients, stir, and enjoy. Remember to stir as you drink to keep the powders suspended.

My First Attempt at Scotch Eggs

One of the biggest challenges when sticking to a diet is being prepared, especially if it’s a more restrictive diet. When eating low carb, or ketogenic, there is often not much available when you are out and about or at work, so I’m trying to make sure I bring food with me to work so that I’m not tempted to grab an “off plan” muffin or croissant… (I’m a breakfast server at a hotel)

Today was my first attempt at scotch eggs. There are lots of recipes on the internet, but basically it’s a hard boiled egg wrapped in sausage, rolled in crumbs of some sort and then baked or fried. I used equal parts of coconut flour and Parmesan cheese for my crumbs.

Sounds simple enough right? Well, sausage “dough” is messy and sticks to your hands! So, after getting the sausage wrapped around my eggs, and a toss in my “crumbs” I gently put them into a pan of hot oil. See how pretty it turned out! 

Well, until you turned it over…somehow I didn’t seal the sausage well enough, or needed a bit more sausage, and it separated away from the egg. Boo….

Despite the lack of coverage, these still taste pretty good, and I think they will work great to bring to work for my breakfast. Just drop in a baggie and go!
